Thông qua phân tích mẫu máu của các đối tượng, các nhà khoa học phát hiện, tháng cuối cùng của đợt thí nghiệm, mức độ interleukin-18 có tính chất gây viêm trong máu của các đối tượng thí nghiệm đã giảm xuống 8% và mức độ 8-isoprostane giảm xuống 16%.

Tuy nhiên, yếu tố chống viêm (mức độ adiponectin) lại tăng cao 6%. Vì vậy các nhà khoa học cho rằng, uống càphê có thể làm chậm lại bệnh viêm.

Ngoài ra, các nhà khoa học còn phát hiện, uống càphê cũng có tác dụng điều tiết mật độ lipoprotein cholesterol cao trong cơ thể người.
